Your liver manufactures most of your cholesterol, and it responds to what you eat. Refined starch and sugar push it toward producing triglyceride rich particles, while soluble fiber binds bile acids and pulls cholesterol out of circulation. Oxidized oils do a different kind of damage: they make the LDL particles you have more likely to inflame the artery wall.

The good news is that lipid panels respond to nutrition within weeks. Triglycerides can shift in two to four weeks, and LDL particle patterns typically follow over about 90 days.

Does eating cholesterol raise my cholesterol?

Why do you talk about triglycerides and insulin on a cholesterol page?
